Honey-Oat Crunch

Since I am on low-calorie diet, hardly have options for cookies (which I really really love)! And the toughest part is, Christmas around the corner! I mean, it's time for cakes, cookies and other delicious stuffs! You can smell butter, chocolate or vanilla everywhere go! So you can clearly understand what "hell" I am going through!!
And then, thought to make some oat cookies to celebrate this Christmassy spirit without being too much guilty! Oat crunch with honey & butter (well ..I couldn't stop myself using butter!) and some fruits. To be honest, I am loving it and so "the man" (I never expected though!). I am truly a happy-heart now! :)


Ingredients for "Honey-Oat Crunch":

Yield : 15-18 cookies

  1. Rolled oats 1 and 1/2 cup
  2. Whole wheat flour (I used Atta flour) 1/2 cup
  3. Light brown sugar 1/4 cup
  4. Honey 1/2 cup
  5. Egg 1 (room temperature)
  6. Unsalted butter 3 table spoon (room temperature)
  7. Water 1 table spoon
  8. Salt 1/2 tea spoon
  9. Baking soda 1/4 tea spoon
  10. Vanilla extract 1 tea spoon
  11. Dried cranberry 1/2 cup
  12. Walnut 1/2 cup (chopped)

How to prepare "Honey-Oat Crunch":
  • Preheat your oven to 180°C. Arrange baking paper on your cookie sheet.
  • Cream butter and sugar in a mixing bowl. Then mix with egg, honey and water.
  • Mix dry ingredients in a separate pan. Mix cranberry and walnuts with other dry ingredients. 
  • Now mix dry ingredients with wet ingredients.
  • Drop dough on baking paper with a round shaped table spoon. Keep 2" space between each drop.
  • Bake for 12-17 minutes or until golden (depending on oven). Cool on wire rack.
  • Store in a air-tight jar.
