Stuffed Bun with "deshi" masala (Vegetable & Egg stuffed Bun)

Well.. I am not an expert in baking. Rather a novice.
But yes, I love baking. It's kind of addicting . And once you have started, it's really hard to stop! I love the smell of freshly baked breads and cakes. It gives me immense happiness when those batters and doughs turn into perfect and yummy cakes or breads.
This time I made stuffed bun with vegetable and egg stuffing. I love those stuffed buns. But it's my hubby, who doesn't like those store-bought ones. Because of the stuffing they use. He doesn't like the smell of those spices are used. So I tried my hands on those with a very "deshi" stuffing!! And he loved them. It's easy to make. Soft and tasty.


Ingredients for Stuffed Bun with "deshi" masala:

For dough:

  1. Refined wheat flour / maida 2 cups and 1/2 cup (it will make 6 buns)
  2. Rapid rise yeast (active dry yeast) 1 and 1/2 table spoon
  3. Milk 3/4 cup
  4. Refined oil 2 table spoon + 2 tea spoon
  5. Salt 1/2 tea spoon
  6. Sugar 1 tea spoon
For stuffing:
  1. Potato 1 medium (cut into small cubes)
  2. Carrot 1 medium (cut into small cubes)
  3. French beans 5-6 (cut into small pieces)
  4. Green peas 1/2 cup (I used frozen)
  5. Onion 1 large (finely chopped)
  6. Garlic 2 fat cloves (finely chopped)
  7. Coriander leave 1 sprig (finely chopped)
  8. Green chilli 1 (finely chopped..you can add or reduce according to your taste)
  9. Hard boiled egg 2 (cut into quarters , lengthwise)
  10. Ginger paste 1/2 tea spoon
  11. Whole cumin seeds 1/4 tea spoon
  12. Cumin powder 1/2 tea spoon
  13. Chilli powder 1/2 tea spoon
  14. Turmeric powder 1/4 tea spoon
  15. Salt and sugar according to taste
Other ingredients:

  1. White sesame 2 table spoon
  2. Egg white (from 1 egg)

Step 1.
  • First you need to proof the yeast. Take 3/4 cup lukewarm milk (just warm..not hot). Mix 1 tea spoon sugar into it. Now add yeast. Mix and leave it untouched for 10 minutes. It will rise by that time.
Step 2.
  • Take a large mixing bowl. Shift 2 cups flour and salt to it. Mix well. Now make a well in the middle. Add yeast to it. Add 2 table spoon refined oil to it. Mix with a spatula. And then with hands.
  • Dust some flour on a smooth and clean surface and knead for about 10 minutes. Till the dough is smooth, soft and shiny.
  • Pour 1 tea spoon oil on your palms. Roll the dough on them. Keep the dough in the mixing bowl. Cover the bowl with cling wrap. And keep it in a warm place for rising.
  • I keep it inside my oven, with light on. Keep it like this for an hour at least or until it is doubled in volume.
Step 3.
  • Make the stuffing by the time your dough rises. Wash and boil potato, carrot, beans till they are soft. Heat up a pan with 1 table spoon refined oil. Temper with whole cumin seeds. Add chopped garlic and stir till they turns brownish. Add chopped onion next. Fry until they are translucent and pinkish in colour. 
  • Now add ginger paste, cumin powder, chilli powder, turmeric powder, salt and sugar. Mix and stir well. 
  • Add boiled vegetables now and stir to incorporate with the spices. Add green peas. Cover it with a lid and cook for few minutes on low flame. Until vegetables are well cooked and little mushy. 
  • Add green chilli and coriander leaves. Adjust seasoning. Turn off the flame.
  • Your stuffing is ready.

Step 4.
  • Wrap your baking tray with aluminium foil. Grease it with oil.
  • Back to the dough. Punch down the dough and knead for 10 minutes. Grease the container with 1 tea spoon oil. Keep the dough in it and cover again. Leave it for 45 minutes to an hour to rise again.

  • Now knead it for few minutes and make 6 balls from that dough. Keep that balls on baking tray and leave it for 10 minutes.
  • Now take one ball and flatten it with your fingers. Stuff with the stuffing and 1 quarter egg in it. Cover it up. Shape it smooth and round.

  • Put the open side down on the baking tray. Arrange the buns on baking tray with 2 inches gap.
  • Dilute egg white with 2 table spoon water. Brush egg on the buns. Sprinkle sesame seeds on the.

Step 5.
  • Preheat your oven to 190°C.
  • Bake the buns for 15 to 20 minutes on the middle rack. Mine took exactly 20 minutes. And they are nicely baked and golden brown in color.
  • And your Stuffed Buns are ready to Serve.
Tips:   Use plain wheat flour or bread flour in the place of all purpose flour.
