Da(n)ta Chocchori/ Charchari

My ma used to go mad at me and baba for requesting her to make "daNta chocchori" almost twice a week. This is one of my ma's bests. Till now I request her to make it, everytime I go home. I asked her for recipe. Watched her cooking it. I followed her step by step. Still I feel, ma's "chocchori" is much testier than me. 
However, my father was really satisfied with it's taste, when I made it for him. And I knew that, it's not bad either. 
"Chocchori"(চচ্চড়ি) or "Charchari" is a pure bengali dish. Vegetables are fried, charred and then cooked with black mustard paste and mustard oil. The mustard oil gives it an extra zing.

Ingredients for "Da(n)ta Chocchori":
  1. Sojne daNta / drumstick 2 ( mature and juicy ones...cut into 3-4 inch pieces)
  2. Sweet pumpkin 1 cup ( small cubes)
  3. Potato 1 small (cut into small cubes)
  4. Radish 1 medium (cut into small cubes)
  5. Eggplant 2 small ( cut into small cubes)
  6. Bitter gourd 1 medium ( thinly sliced)
  7. Bori / lentil dumplings 8-10
  8. Panchforon 1 pinch
  9. Mustard paste 1 and 1/2 table spoon (black masturd)
  10. Green chilli few
  11. Mustard oil ( this is must for this dish)
  12. Turmeric powder 1/4 tea spoon
  13. Salt to taste
  14. Sugar pinch of ( optional... I use)

How to make "Da(n)ta Chocchori":
  • Heat oil (for frying vegetables) in a pan. Fry Bori first and take them out. Keep aside. Similarly fry bitter gourd and eggplant one by one. Keep aside.
  • Pressure cook drumstick with little salt, till 1 whistle. Immediately bring the cooker under running water to release the vapour. Or you can boil them with salt until the are tender but in proper shape.( though my ma doesn't boil drumsticks separately as she gets tender ones...which I don't get)
  • Back to the pan. Reduce oil leaving 1 and half table spoon in the pan. Sprinkle panchforon, once the oil is hot. Add a green chilli. Add potato, radish and pumpkin cubes. Stir them to fry. Add salt and little turmeric powder. Stir again. Cover it with a lid and cook over low heat until vegetables are cooked. Add drumstick at this point. Stir and mix well.
  • Mix mustard paste with 2-3 table spoon water and few pinch turmeric powder. Add to vegetables. Sprinkle little more water. Cook for 2 minutes over low heat. Add fried vegetables (except bori) and mix to incorporate with spices. Add pinch of sugar , few more green chillies and adjust seasoning. And then cook over high heat till water is absorbed. Add 1 tea spoon mustard oil. Mix it. Turn off the heat. Chocchori is ready to be served.
  • Crumble boris with your hands and sprinkle over the "Chocchori".
I served "Chocchori" steaming hot rice and "Kancha musurir daal".
