"Amrakhand" ~ The Mango-Shrikhand

"Shrikhand" is one of the most popular desserts in Maharashtrian and Gujrati cuisine. 
The main ingredient of this healthy dessert is, "hung yogurt" or "strained yogurt". Sugar and some flavours like elaichi (cardamom) or kesar (saffron) are mixed with this yogurt and beaten to a creamy smooth delicious dessert..which is known as "Shrikhand".
But "Amrakhand" (आम्रखंड) is a variation of this awesome dish with sweet mangoes. 
Mango season is here. It's summer! There are only few good things about this "Hot" season. And the best of all is mango! I just love this fruit! Smell, texture, color, taste..everything!
In my childhood, one of my most favourite activities were, to collect unripe mangoes (কাঁচা আম ) after thunder-storms (কালবৈশাখী )!!
And my father used to be one of the first mango-buyer of season! Even when it's not the best-quality mangoes! He hardly could resist himself! He hasn't changed till now! :P
However, we will use ripe and sweet mangoes for this dish.

Ingredients for "Amrakhand":

  1. Mango pulp 5-6 table spoon (try to select sweet and flavourful, good quality mango)
  2. Hung yogurt 1 and 1/2 cups (for 2 serving)
  3. Sugar 3 table spoon (or more depending of sweetness of mango and according to your taste)
  4. Mango essence 1 or 2 drops (in case mangoes are not flavourful)
  5. Mango cubes few (small fresh cubes)

How to make "Amrakhand":
  • Place curd on a cheese cloth/ muslin cloth. Carefully hang this from your kitchen tap. Keep it like this for an hour, so that almost all the water drains out. Now put this on a strainer and place this strainer on a bowl. Keep it in fridge over-night. And next day you will get absolutely water-free "hung yogurt".

  • Take a large mixing bowl. Mix yogurt, mango pulp, sugar and mango essence (if using) together to a smooth creamy texture. 
  • Keep it in fridge for couple of hours before you serve.
  • I served with some fresh mango cubes. But it also can be garnished with chopped cashew nuts, almonds or pistachio.
