Aloo-Capsicum Malaiwala

It's not only me, but a story of everybody I guess! There are some days, when you suddenly realise your pantry is almost out of stock to make even an insignificant dinner and you don't have any option other than calling a pizza delivery at home! To make it worse, you are just craving for something home-made!
Well, for me it happens really often. This time I had only few capsicum left in my fridge. And I wanted to make something that can be served with roti. And it came to my mind. It's a easy and quick dish. But tasty at the same time.

Ingredients for "Aloo-Capsicum Malaiwala":
  1. Green capsicum 4 large ( cut into cubes)
  2. Onion 1 large (cut into cubes)
  3. Potato 1 large (cut into small cubes)
  4. Ginger 1 and 1/2 tea spoon (grated)
  5. Tomato 1 medium (chopped)
  6. Green chilli (chopped ..according to taste)
  7. Heavy cream 3-4 table spoon
  8. Dry fenugreek leaf / kasuri methi 1 tea spoon
  9. Whole cumin seed 1 tea spoon
  10. Red chilli powder 1/2 tea spoon
  11. Turmeric powder 1/4 tea spoon
  12. Salt and sugar according to taste
  13. Butter 1 tea spoon
  14. Vegetable oil 4-5 tea spoon
How to make "Aloo-Capsicum Malaiwala":
  • Heat oil in a pan. Fry potato cubes over low heat with salt and pinch of turmeric powder until almost done. Take out from oil and keep aside.
  • Add onion cubes and fry for half minutes. Add capsicum cubes now and saute' for a minutes. Take out onion and capsicum from oil and keep aside.
  • Temper remaining oil with cumin seed. Add grated ginger and chopped chilli. Cook until raw smell is gone. Add tomato, chilli powder, turmeric powder, salt accordingly. Cook until tomato is soft and smashed. Add kasuri methi now. Give it few good stir. 
  • Mix fried vegetables with spices now. Add cream and cook covered over lowest heat for few minutes or until vegetables are well-cooked.
  • Add sugar and check the seasoning. Add butter before you serve. You can add little cream for garnishing as well.
  • It's a nice accompaniment with roti/chapati.
