Lentil Soup with a Spicy touch

I have lots of good memory with soups!
Having my maa's tomato soup when I am suffering from fever and cold. Soup of Rajdhani express with soup sticks when going for a holiday in my late teens. Those hot & sour soups to spend long date evenings at our favourite restaurants ;)
I love the warmth of simple soups...it just makes my mood.
It's one of those day's when I don't need to cook for two.. it's only me. So what's better than a bowl of spicy & warm yet simple soup to celebrate my loneliness!!
Today I made a simple lentil soup [I often make it to satisfy my soup-craving and also because the "man of the house" loves it ;)]


Ingredient for Lentil Soup:

  • Red lentil 2 sups (washed and stained)
  • Carrot 1 medium (washed peeled and thinly sliced)
  • Red onion 1 medium (finely chopped)
  • Fresh coriander leaves 1 tea spoon (chopped...optional)
  • Garlic 3 fat cloves (finely sliced)
  • Chilli flakes 1 tea spoon
  • Cunin seed 1/2 tea spoon
  • Olive oil 2+1 tea spoons
  • Water/Vegetable stock/Chicken stock (I used water that day)
  • Salt to taste

How to prepare Lentil Soup:
  • Heat 1 tea spoon oil in a sauce pan. Add chopped onion and fry until caramelized. Add lentil and carrot one by one. Then salt and sufficiaant water/vegetable stock/chicken stock (may be 4 and half cups..later you can add more hot if needed.). I used water.
  • Bring it to boil and shimmer covered until lentil is cooked. Check the consistency. Reduce or add water/stock if needed.
  • Transfer to a blender and blend it smooth.
  • Heat 2 tea spoon oil in a separate pan. Add cumin seed. Give it nice stirs till its aromatic.
  • Add garlic. Fry until garlic is golden brown (be careful not to burn it)
  • Turn off the heat and add chilli flakes.
  • Now fill your soup bowls and spread the spiced garlic oil on the top of your soup. You can add chopped coriander leaves for a little deshi touch (this is optional).
  • Enjoy your soup with toasted bread or soup sticks.
