Dim Posto in different ways

Err... it's all about "Posto"!! We "ghoti"s have a huge "bod naam"of being "posto-pagol"!!
I can't deny the fact! We can have almost any vegetable with touch of "posto"! Alu posto and Biulir daal is the best combo to almost all "ghoti" if not all bengali!
But today I am talking about Dim Posto...Trust me it's a delicious combo.
My maa makes "dim posto" in two different ways..one is with hard-boiled eggs and the other is with scrambled eggs.
I am sharing both the process here. First one with hard-boiled egg.

Ingredients for Dim Posto with Boiled egg:
  1. Hard boiled egg 4 pieces (de shelled)
  2. Poppy seed paste 3-4 table spoon (with 2 chillies)
  3. Onion 1 large (thinly sliced)
  4. Salt according to taste
  5. Turmeric few pinch
  6. Green chilli 2 (slitted)
  7. Mustard oil 2 table spoon + 1table spoon (use canola or sunflower oil if mustard oil is not available)
How to prepare Dim Posto:
  • Heat 2 table spoon mustard oil (or any other oil). Fry eggs with pinch of turmeric powder and little salt. Cut eggs into halves. Keep aside.
  • Fry onion slices to brown. Take half of fried onions separately. Add poppy seed paste. Fry for a minute. Add 3-4 table spoon water. Mix well and cook for a minute over medium heat until the raw smell is gone. Add salt (according to your taste). Add chilli slices. Turn off the heat and add 1 table spoon oil. Mix well.
  • Arrange egg-halves on your serving plate. Spread the gravy over eggs.
  • Finally garnish with fried onion.
  • Enjoy with plain rice.

Now coming to the other way of making "dim posto" . It's takes even lesser time than previous one.

Ingredients for Dim Posto with Scrambled Eggs:
  1. Eggs 3 large
  2. Poppy seed paste 3 table spoon (paste with 2 chillies)
  3. Onion 1 large (thinly sliced)
  4. Salt according to taste
  5. Mustard oil (any other oil if mustard oil is not available) 4 table spoon

How to prepare:
  • Beat 3 eggs lightly and fry them in 2 table spoon oil. Scramble egg with a flat spoon while frying. Keep separately.
  • Heat 1 table spoon oil in pan. Fry onion slices. Add poppy seed paste. Fry for a minute. Add 3-4 table spoon water. Mix well and cook for a minute over medium heat until the raw smell is gone. Add salt (according to your taste).
  • Add fried egg. Mix with spices very well. Cook over full flame till gravy dries. Add chilli slices. Turn off the heat and add 1 table spoon oil. Mix well.
  • Serve hot with plain rice. You can even have it with roti or paratha.
