Old fashioned Fruit cake with tutti-frutti

Chilled misty mornings, woolen cloth, smoking hot tea, gentle's already December! Time for christmas, school holiday, waiting for Santa and not to miss those fruit cakes!
Feeling sun, sweet smell of old-fashioned fruit cakes, holding the cup of smoking hot tea with both hands in a cold winter morning - Ohh of course life is beautiful! Though I never complain about the weather of Kuala Lumpur but indeed I miss those winter mornings.
I baked this seasons first cake this's a simple fruit cake, like I grew up eating with. Recipe is most simple one. But you know, there are things never get old. This is one of them.

Ingredients for "Fruit Cake":

  1. All purpose flour 2 cups and more for dusting baking pan
  2. Sugar 1 cup and 1/4 cup 
  3. Butter 1 cup and more 1 table spoon for greasing baking pan (preferably unsalted, but I used salted one, it hardly makes any difference for this cake)
  4. Salt 1/4 tea spoon (add it only if you are using unsalted butter)
  5. Baking powder 1 tea spoon and 2 more pinches 
  6. Vanilla extract 1 tea spoon
  7. Egg 2 large
  8. Milk 1/2 cup
  9. Tutti-frutti 1 cup (dusted with flour)
  10. Cashew nut 1/4 cup (broken)

How to prepare:

  • Grease your baking pan with butter (I used my loaf pan) and dust with flour.
  • Preheat your oven to 180°C
  • Sieve and shift all purpose flour, salt (if using) and baking powder to a bowl.
  • Take a mixing bowl. Mix Butter and sugar to light and fluffy with help of a hand mixer.
  • Add eggs to butter-sugar mix, one at a time. Mix it to smooth. 

  • Add vanilla extract. Lastly add milk to the batter.
  • Finally add flour mix to the batter. Whisk it to smooth.
  • Add tutti-frutti and cashew nuts. Fold into the batter.
  • Pour the cake batter into greased baking pan. Put into oven and bake for 65-75 minutes at 160°C or until firm . Prick a skewer to check if it is done.
  • Shift to wire rack and let it cool down before you slice it.

  • Add dry 'murabba' pieces if available.
  • Baking time can be different depending on different oven. So it might take 10-15 minutes more time.
