Cranberry Cookies ...easy & delicious!

Holiday spirit still in the air! But I am little late to post this one!
Firstly wish all my readers Merry Christmas and happy holidays. Also wishing a very positively happening New Year in advance!

This year I baked two things for my Santa! First was a traditional Christmas Fruit Cake and the other thing was cranberry cookies. For the cake, I followed Jhum di's (my friend) recipe and she got it from , so I am not writing that here. But I must admit it is a great recipe, and I got an excellent result.
Being a messy and nervous baker I usually opt for easy things while trying something on my own. This time I tried easy-to-make cranberry cookies. And to my delight it was successful. :)

Ingredients for Cranberry Cookies:

  1. All purpose flour 2 cups (220 gm)
  2. Packed brown sugar 1/2 cup (60 gm)
  3. Granulated white sugar 1/4 (30 gm) [I prefer less sweet cookies...increase the amount 1 more table spoon if you want them little more sweet]
  4. Salt 1/4 tea spoon
  5. Baking soda 1 tea spoon 
  6. Unsalted butter 1/2 cup (60 gm) [room temperature]
  7. Egg 1 large
  8. Pure vanilla extract 1 table spoon
  9. Dried cranberry 1 cup 

How to make cookies:

  • Preheat your oven to 190°C.
  • Line your baking tray with baking paper.
  • Shift and mix all purpose flour, salt and baking soda to a bowl.
  • Take another large bowl and mix butter and sugar to light and fluffy with an electric beater. 
  • Now add egg and vanilla extract and beat again to very smooth.
  • Add flour mixture to the egg batter and mix and fold very well with a spatula. It's suppose to be a sticky dough.
  • Finally add cranberries and fold them with spatula.

  • Now take little dough and place it on baking tray. You will have to use hand for this...spoon won't work that good as it will be a sticky dough. Keep 1" gap between 2 cookies as they will  expand in size while baking.
  • Bake them for 14-15 minutes or until done.
  • Let them cool down.
  • And enjoy with a cup of coffee. You can store your cookies in a air-tight container.
