Dhokar Dalna

"Dhokar Dalna" is a masterpiece in traditional Bengali food-world. It's a vegetarian delicacy. I just love this dish. Off course it's not a hassle free one!! But almost all good thing in the world comes with a certain level of difficulty...at least that is what I believe. So simply "koshto korle keshto (read 'dhoka') mele"!!!! ;)
             "Dhoka" is actually made of split bengal gram (cholar daal/chana daal). Dhokar dalna is a curry made with lentil cakes and potato cooked in some spices. This is a pure vegetarian dish, even without onion and garlic (as bengali people consider onion and garlic as non-veg).


Ingredients for making "Dhoka":

  1. Split Bengal gram (cholar daal/ chana daal) 1 cup
  2. Ginger (1 fine slice)
  3. Chilli 1 piece
  4. Asafoetida (2 pinches)
  5. Salt
  6. Whole  cumin seed
  7. Oil

Ingredients for making "Dalna":
  1. Potato 2 medium size (cut into medium size cubes)
  2. Tomato 1 chopped
  3. Ginger paste 1 and 1/2 table spoon
  4. Cumin powder 1 tea spoon
  5. Coriander powder 1 tea spoon
  6. Turmeric powder 1/2 tea spoon
  7. Kashmiri chilli powder 1 tea spoon
  8. Garam mashala 1/4 tea spoon
  9. Salt & sugar according to taste
  10. Whole spices for tempering (1 bay leaf, 1/2 tea spoon whole cumin seed, 1 stick cinnamon, 2-3 cardamom and 2 whole dry chilli)
  11.  Ghee/ clarified butter 1 tea spoon
  12. Oil for cooking
Spices for Dhokar Dalna

How to prepare "Dhokar Dalna":
  • Soak bengal gram over night and wash 3-4 times.
  • Make a paste of bengal gram, ginger slice, chilli with minimum water. Mix asafoetida, cumin seed and salt with it.
  • Heat 2-3 table spoon oil in a non stick pan. Add cumin seed & asafoetida. Stir for few seconds. Add lentil paste to it and keep cooking and stirring with a spoon over medium heat. Continue this process until moisture is completely gone and it comes out very easily from pan. 
  • Transfer to a plate and cut into diamonds before it cools completely. Let them cool down completely and keep separately in a plate. Dhoka is ready.
"Dhoka"s before frying
  • Heat enough oil for frying. Fry Dhoka's very carefully .
 Fried Dhoka
  • Heat 3 table spoon oil in a pan. Fry potato cubes with salt and pinch of turmeric powder. keep them separately. Add whole spices to remaining oil. Fry for few seconds.
  • Add tomato and fry till soft. Next add ginger paste, cumin powder and coriander powder. Cook over medium-high flame until you get the aroma and oil separates completely from spices. Now add chilli powder,turmeric powder, garam mashala powder, salt and sugar. Cook for 2 more minutes.
  • Add fried potato and cook covered over low heat, until potato is half done. Add water and shimmer till potato is completely done. (You should add little more water than the gravy you need, as lentil cake soaks lots of water after a while. Otherwise it's gonna be very dry.)
  • Add Dhoka and shimmer for a minute. Turn off the flame and add ghee.
  • Enjoy Dhokar Dalna with steaming hot plain rice.
