MOMO with HOT sauce & Clear Soup

"MOMO" is actually a type of dumpling. Really popular in Tibet, Nepal and Himalayan states of India (Specially Sikkim , some parts of West Bengal, Arunachal Pradesh etc). There are two types of momo..fried and steamed. Off course there are varieties. Normally momos are served with saucy dips (specially one with chilli-garlic-tomato..basically very hot & spicy) and soups (mostly clear soups).
This is one of the most popular street foods in West Bengal.
 I made steamed one with chicken, but surely can be made with other meats or vegetables.


Ingredients For MOMO:

For making momo-sheet:

  1. Plain wheat flour 500 gm
  2. Extra flour for dusting
  3. Salt few pinch
  4. Vegetable oil 1 tea spoon
  5. Water ( enough to make a soft dough)
For stuffing:
  1. Minced chicken 350-400 gm (approx)
  2. Ginger 1 table spoon (minced/finely chopped)
  3. Garlic 1 and 1/2 table spoon (minced/finely chopped)
  4. Red onion /onion 1 medium (finely chopped)
  5. Fresh chilli according to taste (finely chopped)
  6. Spring onion 1 sprig (finely chopped)
  7. Lime half 1 (squeeze the juice)
  8. Dark soy sauce 1 tea spoon
  9. Vegetable oil 1/2 tea spoon
  10. Salt & black pepper (freshly ground) according to taste


How to make MOMO:
  • Shift and mix wheat flour & salt to a large bowl. Mix with oil. Add water (room temperature) little by little and knead to a very soft (but not sticky) and smooth dough.
  • Leave it covered for 20-30 minutes.
  • Take another bowl and mix all the "ingredients for stuffing" together. Freeze it covered for 20 minutes.
  • **I did not pre-cook/ boil chicken mince. As chicken is a soft meat. But may be you need to boil and stain in prior to marinate if you are using any other meats like pork/lamb/beef.


  • Heat water in you steamer or  in a pan (in case you are using bamboo steamer..also line your steamer with butter paper). Brush oil lightly to your steamer.
  • Make small (marble size) round shape balls from the dough.
  • Flatten them to very thin round shape sheets (dust flour on your board or the flat surface you are using). 
  • Stuff these Momo-sheets with chicken mix and shape them to your preference.

  • Steam Momos for 20 minutes over high heat . And you are ready to go. :-)

Momos are generally served with a hot sauce (roasted garli & chilli based) and clear soup. 

How to make HOT sauce For Momo:

  • Spray/ brush oil to your tawa/grill pan. Roast few cherry tomatoes (4-6), fresh hot red chilli (I used thai chillies ..as they are really spicy..2 pieces I used) and 2-3 cloves garlic together.

  • Blend them to a semi-smooth paste. 
  • Adjust salt and add few drops lime juice.
How to make Clear Soup :
  • Boil 4 bowls water (to make 2 bowls soup). 
  • Add few slices chicken /bones of chicken , 2-3 table spoon finely chopped vegetables (carrot, cabbage, beans etc), crushed garlic (2-3 cloves) and few fresh basil leaf.
  • Next add salt, crushed black pepper and few drops oil.
  • Boil covered over low/medium heat until water reduces to 2 bowls.
  • Serve with chopped spring onion and freshly ground black pepper.
