Pineapple-Coconut Muffin

I was wondering how muffins and cupcakes are different?! Because it almost looks same only except the surface..while cupcakes have a smooth surface, muffins have rough surface. Then I came to know about the basic technical differences between these two. Muffins are much faster and easier to make. In the case of muffin we mix sugar with flour and do not beat the batter to much while mixing with wet ingredients. We just need to combine. And also has difference in quantity of  ingredients.

2 cups flour,
1 and half teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup desiccated coconut
1/2 cup caster sugar
1 egg
1/4 cup melted butter or vegetable oil (I used oil)
1/3 cup milk (or use the drained juice from the crushed pineapple...I used juice)
1 teaspoon vanilla extract
225 gm crushed pineapple ...drained
2 tea spoon brown sugar & 2 tea spoon desiccated coconut (for toping)

  1. In a large bowl add the flour, baking powder,baking soda,coconut and sugar. Stir to mix.
  2. In a small bowl, place the egg, butter milk (or pineapple juice) and vanilla - whisk lightly to incorporate, then stir in the drained crushed pineapple.
  3. Stir this into the dry ingredients until only just combined. 
  4. Spoon the batter into prepared muffin pans and sprinkle over with desiccated coconut and brown sugar.
  5. Bake in a preheated 180°C oven for 20 minutes or until golden brown and cooked through.
